Mexican Pizza

Pizza and Mexican food, two of my favorite foods, in one dish? Sign me up! Do y’all remember the Mexican Pizza from Taco Bell? When they took it off the menu, people were not happy! If you’re one of those people, or you love both pizza and Mexican food like me, then this recipe is for you!


UPDATE 04/18/22: Taco Bell just released that they're bringing back the Mexican Pizza on 05/19/22 at 2pm Central Time. If you don't want to wait until then, or you simply want a cleaned up version of the cult-favorite, keep on scrolling down!



INGREDIENTS 1 lb ground beef 1 pkg grain-free tortillas (I use Siete cassava flour) 2 Tbsp taco seasoning (I Siete use mild) 1 can organic black refried beans, no salt added 1 container store-bought pico de gallo 1 (15 oz) jar red enchilada sauce (I use Siete red enchilada sauce) 1/3 cup mozzarella, shredded off the block

1/3 cup cheddar, shredded off the block

1/3 cup Monterey, shredded off the block Optional Toppings: dairy-free Greek yogurt (I use Kite Hill Greek-style), cilantro, organic salsa


HOW TO MAKE -Preheat oven to 400. -Place tortillas on baking sheet, lightly spray with avocado oil cooking spray, and bake for 3 minutes on each side. Repeat for all tortillas. Keep oven on at 400 degrees for later use. -Brown ground beef, add taco seasoning, and 3 Tbsp of enchilada sauce. Stir to coat beef. -Place 4 of the crisped tortillas on baking sheet. Spread refried black beans on top of each tortilla. Be gentle to not break the tortilla. -Spoon equal amounts of ground beef on top of refried black beans. Place the other tortillas on top. -Spoon 2 Tbsp of enchilada sauce to coat top of each tortilla. Add more if desired.

-Combine all 3 shredded cheeses into a large bowl, and use hands to mix. -Sprinkle 1/4 cup shredded cheese mixture on top of each pizza. -Put back in the oven for 3 minutes, or until cheese is melted and sauce is warm. -Top with pico de gallo and any other toppings of your choice.
