First it was her haircut, now it’s her salad! But for real, the Jennifer Aniston salad does make a great lunch, side dish, or snack. You can also substitute or add whatever you like/have on hand. For example, her recipe calls for pistachios, but I only had almonds, so that’s what I used. I’ll definitely be making it a lot, and FYI, this recipe makes plenty for a crowd!
INGREDIENTS
3 cups cooked quinoa
2 cups cucumbers, chopped
1/2 cup red onion, chopped
1 (15.5 oz) can garbanzo beans, rinsed and drained
1/4 cup mint, chopped
1/4 cup fresh flat-leaf parsley, chopped
1 large lemon, juiced
1/8 cup extra virgin olive oil
1/2 cup almonds, chopped (or walnuts or pistachios)
3/4 cup crumbled feta
Salt, to taste
Fresh black pepper, to taste
HOW TO MAKE
-Combine all ingredients in a large bowl and mix together. That’s it!
-If making ahead, I recommend adding the lemon juice, olive oil, and nuts right before serving. This keeps the salad/nuts from getting soggy.
