Hamburger Soup

This Whole30 hamburger soup is one of the easiest to make, so it’s perfect for a weeknight meal! It’s also one of those meals that’s even better the next day. Some recipes call for it to cook all day, but the Kettle & Fire broth gives it that simmered all day flavor in about 30 minutes!

INGREDIENTS

1 1/2 lbs ground beef

1 yellow onion, chopped

1 tsp garlic, minced

4 Tbsp organic tomato paste

4 celery stalks, thinly sliced

4 carrots, thinly sliced

5 red potatoes, sliced and quartered

1 (8 oz) bag of green beans

1 (14.5 oz) can organic diced tomatoes

1 (32 oz) box beef broth (I use @kettleandfire)

1 tsp Italian seasoning

Sea salt, to taste

Black pepper, to taste

Fresh parsley, for garnish


HOW TO MAKE

-In a Dutch oven or large stock pot over medium heat, brown ground beef.

-Add in onion and garlic. Cook until onion is semi-translucent, about 5 mins.

-Add tomato paste, and mix into beef mixture.

-Add in celery, carrots, potatoes, diced tomatoes, beef broth, and Italian seasoning. Stir to thoroughly combine.

-Increase to high heat and bring to a boil.

-Reduce heat to medium, and simmer, uncovered, for 20-25 minutes, or until potatoes are fork tender.

-Salt and pepper to taste.

-Garnish with fresh parsley,

and serve immediately.
