The most difficult part of this goat cheese log appetizer is not filling up on it before the actual meal! It’s super simple, barely takes any time to make, and is always a hit. It’s not just for Thanksgiving either, it’s great all holiday season!
INGREDIENTS
1 10oz goat cheese log
1/2 cup leftover homemade cranberry sauce
1/4 cup pecans, chopped
1/4 cup walnuts, chopped
1 Tbsp fresh parsley, chopped
Drizzle of local honey (I use @naturenates)
Gluten-free crackers for serving (I use @simplemills sea salt)
HOW TO MAKE
-Let goat cheese log warm to around room temperature.
-Mix chopped pecans, walnuts, and parsley on a large plate.
-Roll goat cheese log in the mixture. Press gently to coat.
-Pour the cranberry sauce in the middle of a rectangular serving dish.
-Place the goat cheese log in the middle on top of cranberry sauce.
-Drizzle honey over goat cheese log.
-Sprinkle any remaining nut/parsley mixture on top.
-Serve with gluten-free crackers.
