Boursin Cheese Pasta

This recipe went viral on TikTok, and I totally get why! I’m straight up obsessed with this gluten-free BOURSIN CHEESE PASTA. I’ve put my own little spin on it, and I think you’re going to love it!


It’s a meatless dish, but I like to crumble crispy prosciutto on top. You can also add shredded chicken or Italian sausage, both would be delish.



INGREDIENTS

2 (5oz) boxes Bousin Garlic & Fine Herbs Cheese

2 pints grape or cherry tomatoes 

1 cup jarred artichokes, rough chopped

1 Tbsp fresh garlic, minced

1 Tbsp extra virgin olive oil

1 Tbsp jarred sun dried tomato oil 

1 (12oz) box gluten-free penne pasta

1/2 cup pasta water

2 Tbsp fresh basil, chopped (more for topping)

2 cups fresh spinach, rough chopped

1/4 tsp red pepper flakes, optional

Salt, to taste

Black pepper, to taste

Optional Toppings: crispy prosciutto, fresh shredded Parmesan, fresh basil


HOW TO MAKE

-Preheat oven to 400.

-Place Boursin cheese and tomatoes in a 9x13 casserole dish.

-Place artichokes on top of tomatoes.

-Sprinkle garlic over entire dish.

-Drizzle olive oil and sun dried tomato oil over entire dish.

-Bake, uncovered, for 25-30 mins, depending on oven.

-While dish is baking, cook pasta according to box instructions.

-Reserve 1/2 cup pasta water.

-Once dish is done baking, use a fork to mash tomatoes. 

-Stir in basil and spinach.

-Stir in pasta and pasta water.

-If using, stir in red pepper flakes, and taste for salt and pepper preference.

-Add desired toppings.

-Enjoy!
