Bacon Spinach Dip

If you’re looking for a holiday appetizer, THIS IS IT! Holy cow y’all, this warm bowl of ooey gooey goodness is a big time crowd pleaser. Whether it’s for Thanksgiving, Friendsgiving, Christmas, New Year’s, Super Bowl or any ‘ol day of the week, this dip will have people going back for more!


SIDE NOTE: This dip can be made dairy-free, and yes, it still tastes good!



INGREDIENTS

8 slices of bacon, cooked and broken up into small pieces (I use Applegate)

1 (8oz) container cream cheese (I use Kite Hill dairy-free)

2/3 cup Greek yogurt (I use Kite Hill dairy-free)

1 tsp smoked paprika

1 tsp garlic powder

Salt and pepper, to taste

4 cups fresh spinach, chopped and tightly packed

1 cup Parmesan, grated

1 cup shredded mozzarella, divided

1 round sourdough bread loaf


HOW TO MAKE

-Preheat oven to 350.

-In a large bowl, stir together cream cheese, yogurt, paprika, garlic powder, salt, and pepper.

-Fold in bacon, spinach, Parmesan, and 3/4 cup mozzarella.

-Cut a hole at the top of the bread loaf, and hollow out making a bowl.

-Spoon dip into bread bowl, and sprinkle the top with remaining mozzarella.

-Bake until bubbly, about 25 mins.

-Serve with toasted bread pieces, crackers, tortilla chips, or veggies.
